Sweet Potato French Toast with Caramelized Bananas

Breakfast is without a doubt my favorite time of day and my favorite meal. I am down for brunch and brinner for the obvious reason of breakfast based foods but with a fun (and strong) side of Blood Mary's. Very rarely will you catch me eating a bowl of cereal, instant oatmeal, cereal bar, freezer waffles, and so on to start my day. During my rushed mornings (damn procrastination!) I will make a shake in my Ninja Blender, filled with nutritious fillings.
Like many, I am not immediately hungry when I wake up therefore I wait about an hour before I consume any food. This gives me plenty of time to re-hydrate with a cold glass of water, relax with hot cup of coffee, and create a breakfast that provides my body of all the right fixin's! Oddly enough I was craving french toast as I was lying on my couch watching Food Network's: Chopped. If you've never watched this show let me briefly explain: 4 contestants, 3 rounds. Must create Appetizer, Main Course, and Dessert. Each round the show brings out a box that includes a four items the contestants must include in their dish! Which brings me to this: They had one item for their dinner feature that had to include french toast and right then....HOOKED. ON MY MIND. I NEED SOME TOAST. The scene from Forty Year Old Virgin where Leslie Mann is driving insane in her car with Steve Carell yelling "FRENCH TOAST!" in such a desperate way is ME...but on the couch at 11pm, dreaming of breakfast.

I've used sweet potatoes in various ways that are uncommon, but never tried french toast style. Knowing I had a few sweet potatoes that needed to be made and my hankering for french toast provided me the perfect inspiration! (After I had created these I looked on Pinterest to see if anyone else had this brilliant idea....and of course there are other amazing people out there who have their own ways of doing this! Which I LOVE seeing!)
This recipe is just in time for a wonderful, relaxed weekend AND is a great post-workout fuel!

Sweet Potato French Toast with Pan Seared Banana Topping
2 Servings (2 toasts/person)
Ingredients:
1/2c Baked and Smashed Sweet Potato
4 Slices of Whole Grain bread (I use Dave's Killer Bread POWERSEED)
1 Whole Egg
4 tbsp Egg White (or another whole egg)
1/3c Almond Milk (or whatever milk you desire)
1 tsp Cinnamon
1/4 tsp Nutmeg
Drizzle of Pure Maple Syrup
2 Bananas
1/2 tbsp Brown Sugar
Small dollop of REAL butter (why do you want to put fake butter in yo bodies....?)
Method for French Toast:
Heat non-stick pan over medium heat, spray with PAM Coconut
In large bowl combine: smashed sweet potato, whole egg(s), egg whites, cinnamon, nutmeg, pinch of salt, and milk. Whisk together with fork *I would add milk a little at a time! Do not want the consistency too think or too thin*
Place one bread at a time in bowl. Let it soak on both sides for about one minute before transferring to pan (gotta get juiced up)
Be careful when you add to pan, the bread is now prone to tear due to the heaviness of batter. Add coated bread to pan and cook for about 2 minutes or until golden brown.
Repeat until batter is gone!
Method for Caramelized Banana:
While your bread is cooking heat a small non-stick pan to medium-low heat
Add butter and brown sugar to pan
Add sliced bananas, stir together, and let sit
Shake a few times to ensure no burning throughout.
The Plate:
Place 2 French Toast on plate
Top with pan seared bananas
Drizzle with pure maple syrup
Dust cinnamon across plate
