Roasted Mustard-Sage Turkey Breast

New year, more food! Okay, so I made this actual recipe in November when I couldn't wait for the Thanksgiving vibes any longer, BUT its on my list to make again this month. This was my first time ever handling a full turkey breast! It was a lot easier than I had expected, made me feel a little more experienced as a "cook". Once turkey was in oven for about five minutes the house began to smell amazing. If you love the smell of comfort food, make this, you're welcome.
What attracted me most to make this version was its simplicity (since this was my first breast). The photo from Food and Wine looked good and I knew the texture on the turkey was right up my alley. This year I encourage you to step out of your "kitchen/cooking" comfort zone and raise the bar a little! Experimenting can be a lot of fun, especially when the meal turns out on point. I paired this turkey breast with an orange-ginger infused cranberry sauce--the tartness paired with refreshing homemade orange juice had my tastebuds rejoicing. Next time I will also pair with the Ginger Mashed Sweet Potatoes I've recently made which are out of this world!

Roasted Mustard Sage Turkey Breast
Ingredients:
1 2-lb Turkey Breast
1/2 cup dry bread crumbs (I used Udi's Gluten Free Panko Bread Crumbs)
1.5tsp dried sage
1/4 cup chopped parsley (I used leftover for garnish on rest of weeks foods)
3tbsp melted butter (USE REAL BUTTER!)
3/4tsp salt
1/4tsp black pepper
1tbsp Dijon Mustard
Directions:
Preheat oven to 450 degrees
Whisk together bread crumbs, sage, parsley, 1/4tsp of the salt and melted butter in a small bowl
Set the turkey in a pan (not a cookie sheet) and add remaining salt to coat. Then brush on mustard on outside of turkey. If you do not have a brush use your finger tips! This is what helps adhere the "crust" to the turkey.
Take the small bowl of crumb mixture and add onto the turkey breast. Coating as much as possible!
Place turkey in oven for 20min at 450 degrees
Reduce oven to 375 degrees and continue roasting 15-20 minutes longer
Once turkey is done let it sit out for about 10 minutes before you cut into its juiciness!
If you are left thinking "wait, thats it?" thats exactly how I initially reacted. Quick, easy, and using real, wholesome ingredients! The prep time takes about 10-15 minutes and rest is taken care of in the oven. To all of you busy folks, this recipe is calling your name!
