Perfectly Roasted Beets

Beets have been my jam since I discovered "beet based" juice early last year (which are now my favorites!) and Beet Hummus late last year. Never thought I'd see the day where I'd become a "beet" girl; I thank my forever changing tastebuds. Finally took the plunge to spend the $2.99 for three beautifully vibrant beets (typically three comes in the price point). Instead of making hummus, I wanted to find a way to roast them and be able to eat with flavor (not just BEET booming in your mouth). Needless to say I've found a favorite way and wanted to share with you!

This "Perfectly Roasted Beet" takes 10-15 minutes to prep and 20-30 minutes to roast (perfect opportunity to finish other cooking, chores, read a book, play games, or become a couch potato).

ONE CUP of beets is approximately 2.2g protein, 13g carbs, and 3.8g fiber.

 

Perfectly Roasted Beets

Ingredients:

  • Three beets

  • 1/2 tbsp Ginger

  • 1 tbsp Shallot

  • Drizzle of Olive Oil or Avocado Oil

  • Honey, Goat Cheese, and Cinnamon for garnish (optional)

Directions:(below are photos to refer to)

  1. Preheat oven to 375 degrees

  2. Tear out three separate foil pieces that are large enough to cover each beet loosely

  3. Cut off ends of beets and peel skin. Place each beet on their own foil piece.

  4. Drizzle olive oil or avocado oil on each beet. I eyeballed this, but if I had to guess 2 tsp.

  5. Chop shallot and ginger. Sprinkle evenly on top of each beet.

  6. Top with little sea salt and fold foil loosely on each beet. This allows the beet to "breathe" and keep moisture during the roasting process.

  7. Place directly on rack. Roast for 20-30 minutes. This greatly depends on the beet size. Once you can pierce each beet smoothly, thats when they're done.

  8. Home will smell amazing too =D A PLUS!

  9. Once roasted, top with honey + cinnamon + goat cheese. Add to salads, as a side of its own, sandwiches, crackers, and so on! The sweetness combined with the "root flavor" combined with the creamy cheese is mouth watering (in my taste bud opinion). Don't like goat cheese? Sub for another creamy option!
