Tired of the same BORING breakfast that your sleepy auto-pilot body goes to? Cereal, to go breakfast bars that are actually full of crap (yah, they're CRAP), instant oatmeal, and yadda yadda. No wonder many people skip the breakfast part of the day! Let me help rescue you from a gray morning with these "not your average donuts": The Scrambled Donut.

Y'all, besides the fact these are super cute and fun, they're benefits are also amazing: protein packed, make multiple at a time, you can get creative, easy snack option, on the go grabs, more veggies is more nutrition, have anytime of the day-----do I really need to go on?! Wait yes, one more...the KIDS cannot forget the KIDS! They're so fun for them and helps get quality nutrition into their stubborn picky bodies! Don't be surprised if they play with their food on this one, but who doesn't love a good egg donut ring?

Donut Forget Egg Nutrition

By now I'm sure you've realize I am a nutrition + food lover. Therefore, I talk to my daughter (5-years-old) as if she is one too (which she is well on her way to being a foodie herself!) by educating her on how foods are benefiting her body! Come to find out not only does she love to eat (some of) my foods, but she loves to learn about them too (PRAISES!). If you have a young one and want to begin educating on nutrition leave it at one simple sentence that includes up to three facts because we all know how kids are not only forgetful but they'll lose interest quick if you get too technical.

Here is a list of nutrition eggs provide (high to low):

  • Selenium

  • Vitamin B2

  • Vitamin B12

  • Phosphorus

  • Vitamin B5

  • Vitamin A

  • Folate

  • Also contain small amounts of: Vitamin D, Vitamin E, Vitamin K, Vitamin B6, Calcium, and Zinc

Health Benefits Include:

  • Its high cholesterol content does not adversely affect blood cholesterol

  • Increase in HDL (the good) Cholesterol

  • B Vitamins provide Choline, which many individuals do not get enough of

  • Reduce risk of heart disease and may reduce risk of stroke

  • Contain Lutein and Zeaxanthin antioxidants which are linked to eye health

  • Reduce triglycerides

  • High quality protein with essential amino acids

  • Keep you fuller for longer

I eat a combination of whole eggs and egg whites regularly and is a staple in my fridge/lifestyle!

Scrambled Donuts

Ingredients:

  • 4 Whole Eggs

  • 3 Servings of Egg Whites

  • Veggies

  • I used chopped spinach, onion, and jalapeño for this one (helped clean out my fridge!)

  • Salt & Pepper

Method:

  1. Preheat oven to 350 degrees

  2. Spray donut pan with coconut oil

  3. I got my donut pan from Home Goods for $5.99! Since they are small donuts it can hold 112

  4. Scramble eggs and egg whites with the salt and pepper

  5. Place spinach first, followed by egg mixture, followed by veggies

  6. Place in oven to bake for about 10min. You may need additional time depending on your oven and how much additional veggies you added *REMEMBER TO BE CREATIVE!*

  7. Let cool about 5min. before taking out (I do recommend placing on a cooling rack so their bottoms do not get soggy!)

  8. Eat as desired and store away the rest! Put in Tupperware to take as a snack later on =D

Happy Forkin'
